Proteolytic enzymes digest protein by aiding in the digestion process, breaking it down into amino acids. They can be taken as a supplement, but better yet, they can be found naturally in certain foods. A great example is papaya, which contains the proteolytic enzyme papain.
Traditionally harvested from the Amazonian rainforest by ancient Peruvians, Sacha Inchi or the ‘Inca Peanut’ is an excellent source of the macronutrients protein and fat. Its edible oil is found in the nuts, which have a remarkably high content of polyunsaturated fatty acids; more than any other plant based oils including olive and sunflower.
Thaumatin is a natural, plant based low-calorie sweetener and flavour modifier. The protein is often used primarily for its flavour-modifying properties and not exclusively as a sweetener. The thaumatins were first found as a mixture of proteins isolated from the katemfefruit(Thaumatococcus daniellii Bennett) of west Africa. Some proteins in the thaumatin family of sweeteners are roughly 2000 times more potent than sugar. Although very sweet, thaumatin's taste is markedly different from sugar's. The sweetness of thaumatin builds very slowly. Perception lasts a long time, leaving a liquorice-like aftertaste at high usage levels. Thaumatin is highly water-soluble, stable to heating, and stable under acidic conditions. Thaumatin is widely recognised to have the nicest mouth feel of all the natural sweeteners (Including Stevia and Xylitol) and has a lower insulin spike response to other plant based sweeteners.
